Mother's Day Morning Breakie ... with LUV from K & Dada!
Mother's Day this year was a superb buzy one for the entire Family! Started off with Kiersten's Sports Day follow with Mother's Day Celebration and Christian's 1st Birthday. At the same time, gotta layan ALL grandparents (the kids and mine) yi-ma ku-cheh sam-ku lok-po, beloved friends (you guys are the saviour!) that specially make themselves available for Christian's Party :P

It started off so superbly sweet when i was expecting a storm ... Kiersten & Dada wake up early to make me breakie .. one of my favourite, easy-peasy breakfast (also my colleague's, San Ling ... he tested it a said it was super yummy too. Well he is no picky on food though)
From one of my easy-peasy recipe!
* It is sooooo super easy, even with me verbalising it, one can visualised & totally know how to do it like an expert!
I call it ... EGG-muffin :)
Estimated cooking time: 10mins preparation + 20mins baking time
Ingredients (for 12 EGG-muffins):
a) Egg - 5 Biji
b) Back Bacon - 150gm (i don't normally buy streaky bacons though it's Chris's fav ... too much fats obviously!)
c) Carrot - 1 whole (medium size)
d) Bombay Onion - 1 big onion
e) Cheddar Cheese
f) Craft Cheese
g) Fresh Milk - 1 cup (Room Temperature)
h) Egg white - from 1 egg to use as polishing
* You may add in miced florets of broccoli, frozen green pea, corn kennel, strawberry, dry apricot, etc ... Be creative!
Pre-cooking:
+ Mince ingredients (b) to (d)
+ Grate cheddar & Craft cheese - enough to fill up a soup bowl. You may half it or having one more than the other type.
+ Stir fry ingredients (c) & (d) in a non-stick pan with a tsp of Olive oil until soft & add in minced Bacon to stir fry
+ Beat the eggs in a bowl
+ Mix cooked ingredients + grated cheese + milk + beaten egg into a bowl - Stir & mix well
+ Apply egg white with a baking brush into muffin tray (this is to avoid sticking to the pan)
Cooking:
+ Heat up oven to 220 degree
+ Scoop in mixture to tray
+ Place tray into Oven
+ My old-faithful oven takes 10 - 15mins to bake the 'Bottom' & 5mins for the 'Top'
+ Once done, take it out from the tray staright, leave to cool & serve!
* You may alternatively serves it with Raspberry OR Lingonberry Jam with a big mug of freshly squeezed juice ... totally a booster to start off the day :)
I was totally smitten, therefore i wish i could have kept the egg-muffins & juice into a Time Capsule!
